Ginger cookies

Ginger cookies

Ingredients:

100 gm butter or ghee
1/2 cup of date syrup(or 1/2 cup molasses)
1egg with 1/4 tsp of lemon juice and 1tsp of cinnamon powder.
1 tsp ginger powder
1/4 tsp grounded clove
Splash of grated nutmeg
Dash of salt
1&1/2cup oat flour
1/2 cup barley flour
1/2 cup ground raw almonds
1 tsp of baking powder
1/4 tsp of baking soda

1. Start with mixing butter and date syrup together then add the egg, lemon, and cinnamon, then the flour and the rest of ingredients.
2. Cover the dough with cling film and put it in the fridge for at least 2 hours.
3. Spread the dough between two plastic bags(2cm thickness).
4.cut the cookies with a cookie cutter(I prefer the small cutters)you can also put in a silicon mold.
5.put in oven 180 degrees Celsius for 10 to 15 minutes.

You can only use oat flour, you can also ground raw almond, but not too much, we don't want to end up with almond butter.

For the cup shape:
Don't put baking powder and baking soda.
Put in cartoon disposable cups or the ones for espresso and fill the cups with any grains covered in parchment paper to keep them open, then remove the parchment paper containing the grains then put again for 2-3 minutes in the oven. Leave the cups to cool down

Melt dark chocolate over a hot water bath and cover the cookie cup from the inside.

The kids drink any thing in those cups😉
But if you want to send them to school skip the choclate part and put nuts or pop corn inside then cover with cling film😋😋
